Zesty Chicken Chili Recipe


We served this chili at our 2012 Tailgate Festival...it was a hit!


  • 1 lb. boneless chicken breasts, or chicken tenders, cut into 1" pieces
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced (or 1 tablespoon minced garlic)
  • 2 cups chicken broth
  • 1 cup Kitchen Kettle Zesty Salsa
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon hot sauce, if desired
  • 1 teaspoon black pepper
  • 1-15 oz. cannellini or great northern beans, drained


Cook chicken pieces in hot oil in a medium skillet over medium high heat until browned, about 4 minutes. Place in a 4 quart crock pot. Add onion and garlic to skillet; saute until vegetables are tender. Add broth, stirring to loosen particles from bottom of skillet. Add broth mixture to chicken in crock pot. Stir in salsa, corn, cumin, black pepper, and hot sauce, if using. Cover and cook on low for 10 hours. Add beans to chicken mixture. Mash a few beans with a spoon or potato masher until desired consistency is reached.
