A healthy salad with the fresh tastes of corn relish and corn salsa.
- 1 Box Uncle Ben’s Wild Rice Blend (cook as per directions on box)
- 1 1/2 pint jar Kitchen Kettle Corn Relish
- 2 1/2 pint jars of Kitchen Kettle Corn Salsa
- 2 Tbsp. parsley
- 2 cups black beans, cooked
- 1 Tbsp. scallions
- 1 Tbsp. cumin
- 2 Tbsp. cilantro
- 1/2 cup celery
Cook rice according to directions on box. When rice is completely cooked, add all ingredients and let cool. Refrigerate, serve and enjoy the next day!
