Whoopie Pies Recipe

An authentic Lancaster County treat!

Ingredients

  • Cookie:
  • 4 eggs
  • 2 c. vegetable oil
  • 4 c. sugar
  • 4 tsp. salt
  • 4 tsp. vanilla
  • 2 c. sour cream
  • 2 c. cocoa
  • 7 c. flour
  • 4 tsp. baking soda
  • 2 c. hot water
  • Filling:
  • 1/2 c. shortening
  • 1/2 c. butter
  • 4 Tbsp. flour
  • 1 c. granulated sugar
  • 1/2 c. milk
  • 1 tsp. vanilla
  • pinch of salt

Instructions

Cookie:
Cream together eggs, vegetable oil and sugar until light and fluffy. Add salt, vanilla, and sour cream; beat well. Combine cocoa and flour. Mix baking soda in hot water. Add dry ingredients to creamed ingredients, alternating with hot water. Drop by rounded tablespoons onto a greased cookie sheet, Bake at 400 degrees for 8-10 minutes or until tops spring back when lightly touched. Cool completely before putting them together with filling.

Filling:
Beat shortening, butter, and flour together with an electric mixer until well combined. Add remaining ingredients and beat until fluffy, approximately 10 minutes. Place filling on the flat side of one cookie and then top with a second cookie. Enjoy!
