Vegetable Quesadillas Recipe


Healthy but flavorful quesadillas!


  • 3 tbsp. olive oil
  • 1/2 cup sliced onions (yellow squash, zucchini, red & green pepper, portabella mushroom.)
  • 1 cup Kitchen Kettle Zesty Salsa
  • 1 1/2 cup grated cheddar cheese
  • 2 tbsp. chopped cilantro
  • 1 tbsp. finely chopped garlic
  • 1 cup assorted vegetable julienne
  • 8 medium tortilla
  • 2/3 cup sour cream
  • salt & pepper to taste


Heat oil in a pan. Add garlic & onion and saute until soft. Add vegetables. Stir & cook until tender. Heat non-stick griddle or pan. Divide cheese & vegetables into 4. Place cheese on tortilla to melt. Add vegetables & Kitchen Kettle Zesty Salsa. Top with tortilla. Flip till brown. Remove from pan and cut into 4 pieces. Drizzle with sour cream.
