Tuscan Herb Balsamic Pasta with Roasted Vegetables Recipe

A hearty, flavorful pasta perfect for weeknights.

Ingredients

  • 12 oz. pasta (penne or fusilli)
  • 2 Tbsp. Olive Basin Tuscan Herb Olive Oil
  • 1 Tbsp. Olive Basin Traditional Balsamic Vinegar
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 c. cherry tomatoes, halved
  • 2 cloves garlic, minced
  • ½ tsp. dried oregano
  • ¼ tsp. salt
  • ¼ tsp. black pepper
  • ¼ c. grated Parmesan cheese
  • Fresh basil for garnish

Instructions

Preheat oven to 400°F (200°C). Toss zucchini, bell pepper, cherry tomatoes, and garlic with Tuscan Herb Olive Oil, oregano, salt, and pepper. Roast for 20 minutes, stirring halfway. Cook pasta according to package instructions. Drain and toss with roasted vegetables. Drizzle with Traditional Balsamic and sprinkle with Parmesan and fresh basil. Serve warm.
