The Newlywed's Chocolate Cake and Peanut Butter Icing Recipe

Scrumptious Chocolate Cake!

  • Chocolate Cake:
  • 1 3/4 c. sugar
  • 3/4 c. cocoa
  • 1 3/4 c. flour
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 c. milk
  • 2 eggs
  • 1/2 c. applesauce - I use a no sugar added version
  • 2 tsp. vanilla
  • 1 c. boiling water
  • Peanut Butter Icing:
  • 1 stick butter, softened
  • 2/3 c. peanut butter
  • 2-3 c. 10x sugar
  • 1 Tbsp. vanilla
  • 1 Tbsp. milk

For the Cake:
Grease a 9x13 pan. Heat your oven to 350 degrees. Mix all your dry ingredients together. Add the milk, eggs, applesauce and vanilla and mix just until blended. Add the boiling water and mix just until incorporated. Batter will be warm and runny when you pour it into your pan. Bake for 30 minutes. Let cake cool completely before topping with icing.

For the Icing:
Add the butter, peanut butter, 10x sugar and vanilla to a mixing bowl and beat on high for 1-2 minutes. Add milk and beat for 5 more minutes. A stand mixer helps to create extra creamy and fluffy icing, but I used a hand held mixer until I got married which works just as well.
