Summer Tarts Recipe

a 'Martha Stewart-esque' recipe...easy as can be and makes a colorful presentation

Ingredients

  • 1 jar lemon curd
  • 1 fresh pomegranate
  • 1 kiwi
  • 1 pkg frozen pre-made phyllo pastry shells

Instructions

Defrost shells, bake in oven according to pkg. directions.
Cut open pomegranate and separate out red fruit.
Peel kiwi, slice widthwise into rounds, cut rounds into 6 even, pie-shaped pieces.
Spoon approx. 1tsp. lemon curd into bottom of each shell.
Place one kiwi wedge into each shell, point-down into the curd.
Add some pomegranate to each shell for a splash of color and tang!
Works best if assembled just before serving.
