2017 and 2018 Rhubarb Baking Contest Winner - 1st Place Dessert Category
Batter:Preheat oven to 350 degrees. Mix together butter, eggs and orange juice. In another bowl, combine sugar, flour and baking soda. Then add to butter mixture. Combine well. Gently fold in strawberries and rhubarb. Pour batter into cupcake sleeves and bake at 350 for 10-15 minutes. Remove from tin and cool on rack. Frosting:Beat butter and cream cheese until smooth. Add vanilla bean and powdered sugar. Beat until smooth. Frost cupcakes when cooled.
