Strawberry Rhubarb Buttermilk Cake Recipe


This was entered in our 2013 Rhubarb Festival. Great recipe Cheryl! This won 3rd place in our cake division!


  • 1 ½ cup flour
  • ¾ tsp. baking powder
  • ¾ tsp. baking soda
  • ¾ tsp. salt
  • 6 Tbs. softened butter
  • ½ cup sugar
  • ½ cup Turbinado sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 ½ cups Strawberries
  • ½ Cup Rhubarb (soaked in 1 teaspoon sugar for 30 minutes)


Preheat Oven to 400°. Grease and flour spring form pan.
Mix Dry ingredients in a bowl.

Beat butter and sugars in separate bowl until creamy. Add vanilla and eggs and beat. Slowly add dry ingredients and buttermilk at low speed until just blended.

Pour mixture into pan. Top with strawberries (whole if small. halved if large) and sprinkle generously with Turbinado sugar.

Bake 30 to 40 minutes until toothpick into center comes out clean. Cool. Remove to serving dish. Garnish with ring of strawberries and more Turbinado sugar.
