Strawberry Rhubarb Buttermilk Cake Recipe

  • 1 1/2 c. flour
  • 3/4 tsp. baking powder
  • 3/4 tsp. baking soda
  • 3/4 tsp. salt
  • 6 Tbsp. softened butter
  • 1/2 c. sugar
  • 1/2 c. Turbinado sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 1/2 c. strawberries,
  • 1/2 c. rhubarb, soaked in 1 tsp. sugar for 30 minutes


Preheat oven to 400 degrees. Grease and flour spring form pan. Set aside.

Mix dry ingredients in a bowl. Set aside. Beat butter and sugars in separate bowl until creamy. Add vanilla and eggs and beat until fluffy. Slowly add dry ingredients and buttermilk alternately at low speed until just blended. Pour mixture into pan. Top with strawberries, whole if small. halved if large, and sprinkle generously with Turbinado sugar.

Bake 30 to 40 minutes until toothpick into center comes out clean. Cool. Remove to serving dish. Garnish with ring of strawberries and more Turbinado sugar.
