Spicy Island Barbecue Chicken Salad Recipe


Mouth watering chicken salad, literally!


  • 2 lb. chicken thighs
  • 1 bottle Kitchen Kettle Hot and Spicy Grilling Sauce
  • 1 papaya, small dice
  • 1 mango, small dice
  • 1 dill pickle, small dice
  • 1/4 c. apple cider vinegar


Braise chicken thighs in barbeque sauce until tender, about 40 minutes. Strain liquid and reserve. Pull chicken meat and add diced ingredients. Add vinegar and braising liquid until correct consistency. Serve hot or chilled.
