Rhubarb Pie 2018 Recipe

2018 Rhubarb Baking Contest Winner - 1st Place Pie Category

Ingredients

  • 1 - 9" pie shell
  • Pie Filling:
  • 6 c. rhubarb
  • 1 1/2 c. sugar
  • 1 Tbsp. brown sugar
  • 1 Tbsp. flour
  • 3 Tbsp. cornstarch
  • dash salt
  • pinch cinnamon
  • 1 tsp. vanilla
  • Crumb Topping:
  • 1/2 c. sugar
  • 3/4 c. flour
  • 1/3 c. butter, softened

Instructions

Preheat oven to 450 degrees. Mix crumb topping ingredients together. Set aside. Toss rhubarb with remaining filling ingredients and pour into prepared pie shell. Bake at 450 degrees for 10 minutes. Reduce temperature to 375 degrees and continue baking for another 20 minutes. Remove from oven and sprinkle with crumb topping. Return to oven and bake an additional 30-35 minutes or until golden brown.
