Rhubarb Custard Cake Recipe


This rhubarb cake took first place in our Kitchen Kettle Village Rhubarb Baking Contest in 2007.


  • 1 box yellow cake mix
  • 1 cup water
  • 1/3 cup oil
  • 3 eggs
  • 4 cups fresh rhubarb, chopped
  • 1 cup sugar
  • 2 cups heavy cream


Preheat oven at 350 degrees.

Grease a 13" x 9" baking pan. Combine cake mix, water, oil and eggs. Beat until smooth. Pour into baking pan. Sprinkle rhubarb over batter. Sprinkle with sugar. Pour cream on top. Bake at 350 degrees for 1 hour and 15 minutes. Cool for 30 minutes. Store in refrigerator until ready to serve.
