Rhubarb Coffee Cake Recipe


A sweet rhubarb dessert!


  • 1-8 oz package cream cheese
  • 1//2 cup butter
  • 2 eggs
  • 1 tsp. baking powder
  • 1/2 tsp vanilla
  • 1/2 cup Kitchen Kettle Rhubarb Jam
  • 1 cup sugar
  • 1 3/4 cup flour
  • 1/4 cup milk
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt


Beat cheese, sugar and butter until fluffy. Add half the flour, eggs, milk, baking powder, soda, vanilla and salt, beat 2 minutes. Beat in remaining flour. Spread evenly in greased and floured 13x9x2 pan. Spoon on rhubarb jam and marble with knife. Bake at 350 degrees for 30-35 minuets. Cool slightly and sift powdered sugar on top.
