Rhubarb Cheesecake Recipe

2009 Rhubarb Dessert Baking Contest - "Bake a Pie... Save a Farm" - 1st Place Cake Category.

Ingredients

  • Crust:
  • 1 1/2 c. flour
  • 1/4 c. sugar
  • 7 Tbsp. butter
  • Layer 2:
  • 5 c. rhubarb
  • 2/3 c. sugar
  • 2 Tbsp. flour
  • Layer 3:
  • 18 oz. cream cheese
  • 2/3 c. sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 1 tsp. lemon juice
  • Layer 4:
  • 8 oz. sour cream
  • 2 Tbsp. sugar
  • 1 tsp. vanilla

Instructions

Crust:
Mix all together and put in a 10 1/2" cheesecake pan or a 9x13 glass cake pan.

Layer 2:
Toss together and put on top of crust. Bake at 350 degrees for 15 min.

Layer 3:
Mix eggs and sugar. Add softened cream cheese. Mix together. Do not over mix. Pour over hot rhubarb. Bake at 350 degrees for 30 min.

Layer 4:
Mix together. Spread over cream cheese mixture while mixture is still hot. Bake 5 minutes. Chill and serve.
