Rhubarb Bread Recipe

2006 Rhubarb Baking Contest Winner - 1st Place Rhubarb Dessert Category

Ingredients

  • Batter:
  • 1 1/2 c. brown sugar
  • 2/3 c. cooking oil
  • 1 egg
  • 1 c. sour milk
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1 1/2 c. sifted flour
  • 2 c. diced rhubarb
  • 1 c. chopped nuts
  • Topping:
  • 1/2 c. sugar
  • 1 Tbsp. butter

Instructions

Preheat oven to 325 degrees.
Batter:
Mix brown sugar, oil and egg until creamy. In a separate bowl, combine sour milk and baking soda. Stir together with creamy mixture. Add salt, vanilla and flour. Mix well. Fold in rhubarb and nuts. Spoon into two greased pans.

Topping:
Combine sugar and butter until crumbly. Sprinkle evenly over batter in both pans. Bake at 325 degrees for 60 minutes.
