Rhubarb Blonde Brownies Recipe


2013 Rhubarb Festival - Enjoy this recipe featured during a cooking demo at the festival!


  • 2/3 c. butter, melted
  • 2 c. packed brown sugar
  • 2 large eggs
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. vanilla
  • 1 half pint jar Kitchen Kettle Rhubarb, Strawberry Rhubarb, or Raspberry Rhubarb Jam, at room temperature
  • Optional:
  • 1 c. white chocolate chips
  • 1 c. chopped pecans


Preheat oven to 350 degrees. Place melted butter in a mixing bowl. Add brown sugar and beat until combined. Add eggs and mix well. Add flour, baking soda, and salt; beat until thoroughly mixed. Stir in vanilla. Press two-thirds of the dough into a greased 13x9x2" pan. Spread jam on top. Place dollops of the remaining dough on top of the jam. Sprinkle optional ingredients on top, if desired. Bake for 25-30 minutes. Allow them to cool for 15 minutes, and then cover them until completely cool. Cut into bars, and store in an airtight container.
