Rhubarb Bars Recipe


2009 Rhubarb Dessert Baking Contest - "Bake a Pie...Save a Farm" - 1st Place Dessert Category


  • Filling:
  • 3 c. rhubarb
  • 1 1/4 c. sugar
  • 1 Tbsp. cornstarch
  • 1/4 c. water
  • 1/2 tsp. vanilla
  • Crust and Topping:
  • 1 1/2 c. flour
  • 1 1/2 c. oatmeal
  • 1 c. shortening
  • 1 c. brown sugar
  • 1 tsp. baking soda
  • 1 small box Strawberry Jell-O


Cook together rhubarb, sugar, water, and cornstarch until thick. Cool, add vanilla.

Crust and Topping:
In a medium bowl, mix crust and topping ingredients, except Jell-O. Place about half of mixture in prepared pan, press down. Spread with filling. Sprinkle with Jell-O. Place the rest of crust and topping mixture on top and bake at 375 degrees for 35 minutes. Cool and cut into bars. Keep refrigerated.
