2009 Rhubarb Dessert Baking Contest - "Bake a Pie...Save a Farm" - 1st Place Dessert Category
Filling:Cook together rhubarb, sugar, water, and cornstarch until thick. Cool, add vanilla. Crust and Topping:In a medium bowl, mix crust and topping ingredients, except Jell-O. Place about half of mixture in prepared pan, press down. Spread with filling. Sprinkle with Jell-O. Place the rest of crust and topping mixture on top and bake at 375 degrees for 35 minutes. Cool and cut into bars. Keep refrigerated.
