Orange and Beet Salad Recipe

A sophisticated and colorful salad!

Ingredients

• Dressing:
• 1/3 c. Beet juice from Kitchen Kettle Pickled Beets
• 1/4 c. Olive Basin Extra Virgin Olive Oil
• 2 oz. rice vinegar
• Zest of 1 orange
• Salad:
• Mixed greens
• Fresh orange slices
• Walnut pieces
• Feta cheese
• Kitchen Kettle Pickled Beets, sliced

Instructions

Prepare the dressing by mixing together the four ingredients and refrigerate for one hour.

Assembling the Salad:
Place a handful of mixed greens on a salad plate. Place 3 orange slices over greens. Add sliced beets, feta cheese and walnut pieces. Drizzle with dressing.
