No Bun Bruschetta Burgers Recipe

Description

Make a hearty burger for meal time with your family or turn this recipe into an appetizer for a larger crowd. A simple and healthy summer meal when paired with a side.

Ingredients

  • 1 lb. ground chicken or turkey
  • 1/4 c. Aged & Cured Parmesan Cheese
  • 2 cloves garlic
  • 2 Tbsp. basil
  • 1/2 Tbsp. Olive Basin Traditional Balsamic Vinegar
  • salt and pepper to taste
  • 1 Tbsp. Olive Basin Tuscan Herb Olive Oil
  • Fresh Mozzarella
  • Fresh tomatoes for the "bun"
  • 1 c. baby spinach
  • Olive Basin Estilo "Affinato" di Modena Balsamic Vinegar

Instructions

In a large bowl, combine ground meat, parmesan cheese, garlic, basil, and Traditional Balsamic. Season with salt and pepper, then form mixture into as many patties as you would like, according to the size of your tomatoes. In a large skillet add oil and heat over medium heat. Add patties and cook until seared on bottom, about 6 min. Flip and cook until lightly seared, about 4 min. Then top with mozzarella. Cover skillet and cook until cheese melts and chicken is cooked through, 2-3 min. more. Slice tomatoes in half. Do not cut from stem to stem. Season bottom tomato halves with salt and pepper. Top tomatoes with baby spinach, burgers, and basil, then drizzle with Olive Basin Estilo "Affinato" di Modena Balsamic Vinegar. Top with remaining tomato halves and serve immediately.
