Individual Ham Loaves with Pineapple Jalapeno Rhubarb Glaze Recipe

This recipe was presented at the 2011 Rhubarb Festival!

Ingredients

  • 1 lb. Ham Loaf Mix or make your own
  • 1/4 c. Kitchen Kettle Rhubarb Jam
  • 1/4 c. Kitchen Kettle Jalapeno Jam
  • 1/4 c. Kitchen Kettle Pineapple Jam
  • *If you are unable to purchase ham loaf mix, you may prepare as follows:
  • 1 lb. ground pork
  • 1 lb. ground ham
  • 1 c. bread crumbs
  • 1 egg
  • 1 tsp. salt
  • 1/8 tsp. black pepper
  • 3/4 c. milk
  • Mix all of the above ingredients as you would for a meatloaf. Shape into 8 loaves.

Instructions

Shape ham loaf mix into 4 loaves and place in a greased 8"x8" baking pan. Bake at 350 degrees for 10 minutes. Mix together the jams, and glaze the tops of the loaves. Continue to bake for an additional 20 minutes, glazing every 5 minutes.

Ham Loaf mix may be frozen. Thaw completely before use.
