Hot Rhubarb Squares Recipe


2013 Rhubarb Baking Contest Winner - 1st Place Rhubarb Dessert Category


  • 1 c. butter
  • 1 1/2 c. sugar
  • 4 eggs, beaten
  • 2 c. flour
  • 1 tsp. vanilla
  • 1 tsp. lemon or orange extract
  • 2 c. thick rhubarb sauce
  • Powdered sugar for dusting


Cream butter and sugar. Add eggs, beat well, then add flavoring and flour. Spoon into a well-greased 15x10x1 jelly roll pan. Mark batter into 28 squares. Spoon rhubarb sauce into center of each square. Bake about 45 minutes at 350°F or till brown. Cut into squares and dust with powdered sugar.
