Hot Chicken Salad Recipe

Description

A great lunchtime dish from Kitchen Kettle's food specialist, Kristine Grego!

Ingredients

  • 4 c. cooked chicken breasts (10-8oz. breasts)
  • 3/4 c. mayonnaise
  • 1 c. cream of chicken soup
  • 2 c. chopped celery
  • 4 sliced hard cooked eggs
  • 1 tsp. salt
  • 2 T. pimiento
  • 1 tsp. finely chopped onions or chives
  • 1 can water chestnuts
  • 2 tsp. lemon juice
  • 1 c. crushed Ritz crackers
  • 2/3 c. shredded sharp cheddar cheese
  • 1 1/4 c. sliced almonds

Instructions

Mix first 10 ingredients and put in a baking pan.
Combine remaining 3 ingredients and sprinkle over top.
Dot with butter, cover and bake at 400 for 25 minutes.
