Fruit Cocktail Cake Recipe


Who doesn't enjoy a good fruit cake?


  • 1 1/2 c. sugar
  • 1/2 c. oil
  • 2 eggs, beaten
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 c. flour
  • 1 - 15 or 16 oz. can fruit cocktail- remove 4 Tbsp. juice and discard
  • Glaze:
  • 1/2 c. evaporated milk
  • 1 stick butter or margarine
  • 3/4 c. granulated sugar
  • 1 Tbsp. vanilla


Cake mixture:
Combine sugar, oil and eggs. Add baking soda, salt, and flour. Mix well. Gently fold in fruit cocktail. Pour into a greased and floured 13x9x2" pan. Bake at 350 degrees for 45 min. While cake is baking, make glaze.

Place evaporated milk, margarine and sugar in a sauce pan on the stove. Bring to a boil and cook for two minute. Remove from heat and add vanilla. Let glaze cool a few minutes and pour over warm cake.
