Fruit Cocktail Cake Recipe


Who doesn't enjoy a good fruit cake?


  • 1 1/2 cups sugar
  • 1/2 cup oil
  • 2 eggs beaten
  • 2 tsp. baking soda
  • 1/2 tsp salt
  • 2 cups flour
  • 1-15 or 16 oz. can fruit cocktail (less 4 tbsp juice)
  • Glaze:
  • 1/2 cup evaporated milk
  • 1 stick margarine
  • 3/4 cups granulated sugar
  • 1 tbsp. vanilla


Combine sugar, oil and eggs. Stir. Add baking soda, salt, flour and cocktail fruit. Bake for 45 minutes in a greased and floured 13"x9"x2" pan at 350 degrees.
Glaze: Boil for two minutes, evaporated milk, margarine and sugar. Add vanilla. Let glaze cool a few minutes and pour over warm cake.
