Citrus Coconut Shrimp Stir-Fry Recipe

A light and flavorful dish with a tropical twist!

Ingredients

  • 1 lb. shrimp, peeled and deveined
  • 2 Tbsp. Olive Basin Persian Lime Olive Oil
  • 2 Tbsp. Olive Basin Coconut White Balsamic
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 c. snap peas
  • ½ c. pineapple chunks
  • 2 Tbsp. soy sauce
  • 1 Tbsp. honey (optional, for extra sweetness)
  • ½ tsp. red pepper flakes (optional, for heat)
  • 2 Tbsp. chopped cilantro, for garnishing
  • Cooked jasmine rice or rice noodles

Instructions

Heat Persian Lime Olive Oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink. Remove and set aside. In the same pan, add garlic, ginger, bell pepper, and snap peas. Sauté for 3-4 minutes. Stir in pineapple chunks, Coconut White Balsamic, soy sauce, honey, and red pepper flakes. Return shrimp to the pan and toss to coat. Let simmer for 1-2 minutes. Serve over jasmine rice or rice noodles, garnished with chopped cilantro.
