Chilled Seared Shrimp and Watermelon Pickle Salad Recipe

Perfect summer salad!

Ingredients

  • 1/2 tsp. ground coriander
  • 1/4 tsp. salt
  • 1/8 tsp. ground red pepper
  • 1 lb. peeled and deveined large shrimp
  • 1 Tbsp. Olive Basin Hojiblanca Mild Extra Virgin Olive Oil
  • 1 c. English cucumber, halved and thinly sliced
  • 1/2 c. pickled watermelon rind, sliced
  • 1/3 c. pickled watermelon rind juice
  • 1 Tbsp. cider vinegar
  • 1 bag mixed salad greens

Instructions

Place first 4 ingredients in a bowl; toss well. Heat oil in a large non-stick skillet over medium high heat. Add shrimp mixture to pan, and cook for 2 minutes on each side until done. Remove shrimp from heat; cool 10 minutes.

Combine shrimp, cucumber, and remaining ingredients in a large bowl; toss well. Chill for 1 hour. Serve over mixed greens for a light lunch or dinner.
