Chilled Seared Shrimp and Watermelon Pickle Salad Recipe


Perfect summer salad!


  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground red pepper
  • 1 pound peeled and deveined large shrimp
  • 1 tablespoon Melgarejo Hojiblanca Olive Basin Extra Virgin Olive Oil
  • 1 cup thinly sliced halved English cucumber
  • 1/2 cup pickled watermelon rind, sliced
  • 1/3 cup pickled watermelon rind juice
  • 1 tablespoon cider vinegar
  • 1 bag mixed salad greens


Place first 4 ingredients in a bowl; toss well. Heat oil in a large non-stick skillet over medium high heat. Add shrimp mixture to pan, and cook for 2 minutes on each side until done. Remove shrimp from heat; cool 10 minutes.

Combine shrimp, cucumber, and remaining ingredients in a large bowl; toss well. Chill for 1 hour. Serve over mixed greens for a light lunch or dinner.
