Breakfast Hash with Bacon Maple Drizzle Recipe

A hearty, flavorful breakfast with a perfect balance of smoky and sweet!

Ingredients

  • 2 Tbsp. Bacon Olive Oil
  • 1 large russet potato, diced
  • 1 small onion, chopped
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 4 eggs
  • 2 Tbsp. Vermont Maple Balsamic Vinegar
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • ½ tsp. smoked paprika
  • ¼ c. shredded cheddar cheese (optional)
  • 2 Tbsp. cooked bacon, crumbled

Instructions

Heat Bacon Olive Oil in a skillet over medium heat. Add diced potatoes and cook for 5-7 minutes until golden. Stir in onions and bell peppers, season with salt, pepper, and smoked paprika. Cook for another 5 minutes. Make 4 small wells in the hash and crack an egg into each one. Cover and cook until eggs reach your desired doneness. Drizzle Maple Balsamic over the hash and sprinkle with bacon and cheese. Serve immediately and enjoy!
