The 2011 Rhubarb Baking Contest Grand Champion!
Combine sugar, salt and flour. Add sour cream and beat until smooth. Add chopped rhubarb and mix thoroughly. Pour mixture into pie shell. Mix 1 tablespoon sugar with a little cinnamon and sprinkle on top. Bake at 425 degrees for 15 minutes. Reduce heat to 375 degrees and continue baking until knife inserted comes out clean.
