A sophisticated and colorful salad!
- 1/3 cup Beet juice from Kitchen Kettle Pickled Beets
- 1/4 cup olive oil
- 2 oz rice vinegar
- Zest of 1 orange
- Mixed greens
- Fresh orange slices
- Walnut pieces
- Feta cheese
- Kitchen Kettle Pickled Beets (sliced)
Prepare the dressing by mixing together the four ingredients and refrigerate for one hour.
Assembling the Salad:
Place a handful of mixed greens on a salad plate. Place 3 orange slices over greens. Add sliced beets, feta cheese and walnut pieces. Drizzle with dressing.
