Vidalia Onion Relish and Tomato Jam make this meatloaf something to talk about.
- 1 lb. ground beef
- 1/2 lb. ground pork
- 1/2 lb. ground veal
- 2 large eggs
- 4 slices stale bread
- 1/2 cup Kitchen Kettle Vidalia Onion Relish, plus it's juice
- 1/4 cup milk
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- 3/4 cup Kitchen Kettle Tomato Jam, divided
Pre-heat oven to 350 degrees.
In a large bowl add ground meat. Mix two large eggs well and add to meat. In a separate bowl, tear up bread and add 1/2 cup and it's juice of Kitchen Kettle Vidalia Onion Relish and 1/4 cup of milk to bread using it's juices to moisten the bread. If necessary, add a bit more juice from the jar of relish. Then add to meat.
Add 1/2 cup of Kitchen Kettle Tomato Jam. Add seasonings and gently mix meatloaf and form into a loaf. Place in a baking pan and bake for 40 minutes. Remove from the oven and spread remaining Kitchen Kettle Tomato Jam over the top of meatloaf and finish baking at least another 15 minutes.
