This was the entree creation prepared by Huckleberry's Restaurant in the 2010 Kettle Berry Cooking Challenge. Delicious!
- 1/2 cup Minor's Bourbon Sauce
- 2-1/2 cups Cattlemen's Barbecue Sauce
- 1-10 oz. (1/2 pint) jar Kitchen Kettle Seedless Black Raspberry Jam(melted)
- 1/2 cup birch beer
- 1 tsp. garlic powder
- 1 tsp. cayenne pepper
- 8 lbs. trimmed pork shoulder
Trim pork shoulder. Mix all other ingredients together. Place pork shoulder in pan and pour barbecue mixture over it. Roast pork at 350 degrees for 3 hours. Pull pork with two forks until shredded and blend with barbecue sauce mixture already in the pan.
Serve on rolls.
