Delicious and fresh...this is an awesome salsa perfect for dipping.
- 1 large can (15.5 oz.) Black Beans, drained
- 1 bag Cope's Frozen Corn, thawed and drained (fresh can be used in season)
- 1/2 red pepper
- 1/2 red onion
- 1/4 tsp. cumin
- 1/2 cup lime juice
- 1/3 cup Olive Basin Extra Virgin Olive Oil
- 1 tsp. salt
- Cilantro to taste
- Dash of cayenne pepper
Combine all ingredients and mix together in a bowl. Refrigerate at least one hour before serving. Serve on multi-grain tortilla chips for a healthy snack.
