Vegetable Stir Fry with Peanut Vinaigrette

A healthy and delicious recipe using our new Peanut Vinaigrette.

Peanut Vinaigrette
Yield : Serves 2-3, depending on the size of bag of vegeta

  • 2 teaspoons Canola Oil
  • 1 (14-16oz.) bag frozen Stir Fry Vegetables (your choice)*
  • 1/3 cup Kitchen Kettle Peanut Vinaigrette
  • Cooked Rice
  • *Fresh vegetables of your choice, for example, broccoli, carrots, mushrooms, zucchini, green beans, etc. can be used in place of the frozen if desired.
  • -1/2lb. thinly sliced chicken breast can be added to the vegetables. Stir fry in additional 2 teaspoons canola oil first, remove from skillet, and then proceed with vegetables, above.

  • Heat the canola oil in a large nonstick skillet over medium high heat. Add the stir fry vegetables. Cook, stirring frequently, until vegetables are crisp tender.
  • Stir in the KKV Peanut Vinaigrette and continue to cook for 2 more minutes or until heated through. Serve with cooked rice.
